I cook the rice the day before, dice up spam and pan fry it first. I scramble the eggs (salted) and take them off heat before they're done. I fry the rice, and add garlic, green onions (save some to garnish after), ginger, pepper, soy sauce, canola oil, chili oil and a few seasonings to taste. Then I add in the mixed veggies, eggs and spam before turning up the heat and mixing everything together.

Thanks for the suggestion, that actually sounds really good with the Hawaiian twist. I've learned a lot of my cooking from Islanders (Chamorro and filipinos) and have made the recipe as teriyaki fried rice but never thought to add actual pieces of pineapple. Definitely going to happen, seems like a good way to add both acidity and sweetness while matching the flavor profile.
