gf is vegetarian, I've been learning to cook with tofu recently. The main advantage is how cheap it is. A package of 80/20 burger for a simple chili is like 10 bucks whereas a package of tofu is around 2. Plus I like using it instead of chicken in things like fried rice because it can be a pain to wipe down everything super thoroughly and wash your hands so much when using chicken.

Get the extra firm stuff, cut it in half according to pic related, then wrap it in a dish towel or paper towels and put it under some weight to press the water out. I put a glass casserole dish on top of it and put a couple bags of flour or rice in that dish. After about 10 minutes I usually have to change the towels, then another 20 minutes after that. Most people recommend pressing for about 30 minutes, but I find that pressing for a couple hours gives me my best results. Then cube it and saute it in a neutral flavored oil while sprinkling salt liberally to get it ready for use in stir fries and fried rice, or crumble and saute with salt for use in chilis. I can post a couple simple recipes if you're interested.

This. Though I usually bake it rather than sautee it after pressing/cubing. Toss the cubes in some oil/soy sauce/cornstarch and bake for 20-30 minutes while I get the stir fry vegetables chopped and going. Then add the baked tofu and sauce right at the end when the veggies are cooked.

You could absolutely do this, I just like one-potting because I'm lazy and I find that the tofu absorbs the flavors of the soy sauce/hoisin/gochujang/whatever perfectly fine
