So what are you cooking for christmas, either for yourself or friends/familly?
For me it's christmas ham with a mustard/egg crust, julkorv (Christmas sausage), prinskorv (prince sausage), skagenröra (shrimp, mayonaise caviar and dill mixed togheter), pickled herring, eggs and potatoes.
Sorry, no meatballs. Only eats grandmas homemade meatballs. Scan can go fuck themself, their meatballs taste like shit.

Also, do americans eat ham on christmas. When I visited they only served turkey and casseroles pretty much.

Got a 4lbs prime rib roast bone in, going to slow roast it. Prolly use the jous for dressing on the side. Fingerling potatoes or mashed, haven't decided, roasted carrots. Maybe some green peas.

Just 4 people, I expect there to be decent leftovers.

I decided to make focaccia bread, roasted lemon chicken, and pasta aglio e oilo with fresh pasta. I'm also making a wellesly fudge cake for a dessert. Although I have slight concern about creaming butter and sugar without a paddle mixer, I can only hope for the best that it turns out well. I suppose it's a bit of an odd meal for the holidays.

I never really have an excuse to buy ingredients and cook nice meals so I thought it would be a nice thing to do for the two family members I live with. Either of them only eat really poorly cooked food, so I figured even if I mess up not in a grave matter everything should still be okay.

i cant say i really have a recipe since i add ingredient by feeling but im going to guess this time i whent like this

mix:
1dl ströbröd (breadcrumbs?)
1dl cream
1.5 table spoon olive oil
2 eggs

wait until soaked

mix in around 0,7kg of moose meat, could probably be replaced by cow but moose taste better.

add spices for taste then fry a small portion to taste
Spices:
salt
vitpeppar (white pepper?)
kryddpeppar (allspice?)

cool mix for a bit so that balls dont fall apart then

fry balls in butter then when done make the brunsås by frying around 3 tabelspoons of flour for like 2 min, add a bit of beer or water then add cream, vitpeppar (white pepper?), köttbuljong (meat stock?), and a little of a soy you like (i use kikkoman).

remember to always taste the brownsauce to get it just right for u

i hope that helped and i can tell you that my family said the meatballs was the best thing on the julbord

A question for anyone that can accurately answer: when using the lye method, how much should I add to the water? I have food grade lye water in a small bottle, but most recipes online generally don't have any accurate measurements to use. Should I use like 2 cups water and maybe a teaspoon or two of the lye? Maybe a tablespoon? I'm really not sure. Some say a 4% solution so if I used 100ml of water I should use 4ml of lye water too? Idk man, I can't find any accurate shit online! Help please!
