Do you source your meat from local farmers?

Here’s a whole ossibaw pig we butchered. We got it from a local micro farm. They have only 15 pigs at most at a time. The pigs roam freely on a huge piece of land. Best damn pork I’ve ever had. If you haven’t tried it before I highly recommend it. You end up with lots of random bits that you never see at the store. So I just made Rillettes with some of the spine, and several pieces of ribs. I think it depends on the cut a bit. Certain cuts have tougher fat that others. For example cheaper steaks like a strip loin have this gristle next to the fat that is extremely tough and chewy no matter how you cook it.

Yeah the meat I buy is from a college student run farm and butcher. They butcher maybe two animals a week. It's nice driving by their farms on my way to work. They only have a couple dozen of each animal with a lot of room to roam. I got mutton for Christmas. It isn't really that much more expensive than Walmart when you buy in bulk. I bought a huge amount of bottom round for stew and it was 2 dollars more total, so only cents more per pound.

should let you know, since roaming pigs have less control on their diet, it results in more of the pigs consuming critters, which naturally means a higher chance of parasites
most pigs get infected by eating rodents or dead birds
as long as you cook your pork properly should be fine though of course, its just something to be aware of.

1. I don't source my meat from local farmers, I can get it nearly free through old co-workers at the pork factory, but I do sometimes get my beef from the local butcher. Sadly that shop is dying.
2. I've butchered a number of whole animals, but usually worked with it as a second or third stage break down from carcass, quarters, whole bone in loins and stuff.
3. I don't generally use specific recipes for specific cuts but I've found great success using turkish coffee for rubs on pork, will work great on off-cuts, just don't use a regular grind, it needs to be powdered. If you'd rather something similar to pulled pork I'd suggest picking up some powdered iced tea and checking the primary ingredients, if it's top ingredient is citric acid and then sugar, you have a tenderizing marinade which will make it fall apart and give a very nice and refreshing flavour. No need for bbq sauce or anything.
