I live near a local supplier/farmer who does exotic meats and supplies them to all the local major grocery stores. Crocodile was pretty great, kind of like halfway between chicken and an oilfish of some kind. Kangaroo was meh. They used to have a list of all the meats they sold before they rebranded earlier this year. You could order things like python or elk and shit.
Also, most offal is great, but easy to fuck up. Nothing worse than rubbery hearts or livers with the bile bladder still attached.

yeah I love me some liver, and nothing would ruin my daily treat I used to have of Boiled chicken livers with onions and tatos than having one of those nasty green shits in thwm. I'd toss out the whole pack if I found one cause it leech'd into the other ones. it is one of the few things that'd make me throw up on this earth, and the first one I ran into I bit into without noticing it. Got vomit all over my keyboard. terrible stuff

Never had trouble with beef livers I bought at super markets (probably cause they weren't in plastic tins). Also frying up the chicken liver like Tenders/ nuggets made for an awesome "I have stopped caring" soothing meal.

Anything I should try with the other organs? besides sauteing/ boiling/ frying?

For anyone getting into offal, it's this little suspect thing that ruins chicken livers. Normally you can liberally cut around it and remove it, but beware. Notice on the right how the meat is taking on a greenish-yellow tinge. The bile has started to seep back into the liver. Some people will cut off all the green meat, but I usually just toss it. Offal is dirt cheap where I live, anyway.
