What is the point of spending thousands of dollars on a hard as fuck rock countertop if you then have to buy a dedicate cutting board to cut things up?

Why don't people just cut directly ontop of their countertop?

Mostly because it'll ruin the knife. You can probably cut on a granite counter without scratching it but it'll make your knife dull really quickly. I think that's one reason why wood is popular for cutting boards, because it's softer than the knife.

Granite countertops are supposed to be good for making some kinds of dough since it helps keep it cool though. Good for stuff like biscuit doughs that have butter so it won't melt as easily.
