Ribeye, sliced super thin.
White onion. NOT a sweet yellow!
Bell pepper, color not important.
Rope Provel, sub in provolone for plebs who cannot get proper Provel
Italian bread, not fucking French.
Then depending on taste, either jarred banana peppers or jarred jalapeno.

Hit the pan with some light olive oil (high smoke point)
Onions and peppers on the pan
Drop some provel on both sides of the bread and stick it in the oven to toast/melt a bit
Meat in the pan, from this point on stirring cutting and tossing the pan constantly
Salt and pepper or seasoned salt in the pan.
When meat has a little pink left a few of whichever jarred pepper the person wants gets tossed in, along with a little juice from the jar.
Scrape stuff in pan to a middle line, few more ropes of cheese on top.
Bread out of oven, tent over the meat and veg pile, let it steam there for 30ish seconds or till you smell cheese start to melt to the pan and burn.
Clamshell the bread closed to pick up the majority of the filling, plate it with open side up.
Scrape everything else up with your spat and toss it in the sandwich.

There you go, totally not authentic to gross philly street vendors, but a damn good tasting cheesesteak.
