It's just reducing beef stock and sauce in a pot for an hour, may as well make it yourself.

I get beef bones from the farmers market.

Use baby carrots so you don't have to bother prepping carrots, not that it matters I doubt unpeeled carrots would really affect a stock.

Peel and quarter onions. Roast the bones and veggies.

Reduce SLOWLY (after straining of course) so it doesn't get too dark.

Takes an hour to roast the bones and veggies, about a day to make the stock, and then maybe 6-12 hours to reduce it cuz u want to go pretty slowly.

It's a lot of time but nothing technically challenging other than making sure it doesn't go too far and burn.

I've also heard that it smells absolutely awful while reducing, that's my bigger concern with the process. I've seen there's prepackaged stuff so I was just wondering how it compares. I'm not averse to doing things the right way but sometimes the easier option is just as good.
