It's not nearly as bad as you make it seem. Most cereals were marketed as cheap health foods which wasn't really untrue. They can have a place in a balanced diet. As for the sanitarium practices, most of the quirks of the Kellogg bros and others were either strange but benign or later determined to be healthy. Overall, it was an advancement.
The real grifting began when Kellogg's and Post began adding sugar to cereal.
