Hey /ck/

I have cooking experience and have eaten healthy in the past but after a while I always fall back on eating shitty fast food and garbage. How do you plan your meals to be interesting enough to keep you eating right?

tl:dr post cheap healthy and easy meals

I eat whatever I want and limit alcohol. The catch is that I track everything on a phone app. Autistically weighing and measuring everything fits with my personality so it makes me feel in control. But since I track everything it's frustrating if I ever go out to eat. I don't eat out often though so it's fine.

The big thing to remember for weight loss (especially through diet) is that you only really fail if you give up. Even if you overate one day or you're feeling really dejected keep up with it. It's a battle of inches measured in miles. As long as you're always making progress, even if it's smaller than you want, you'll eventually reach your goal.

Why would you need an instant pot for shredded chicken? Just simmer legs or breasts it in water or broth for 30 minutes.

Learn how to cook whole foods. If you're buying produce and meat at the grocery store, you're doing it right. If your foods don't have a shelf life, they're probably not good foods.

So I learned how to make a handful of things I really like with the rice cooker. It's stupid easy and normally just involves throwing some chopped things in and pressing the button.

I moved onto pasta sauces, soups, curries. some mexican dishes. This is in no particular order and was a slow progression. The techniques that you learn as you expand are going to be useful in creating your own style.

I actually did this but I modified it for work to make it nice cold.
I use shell pasta and do the Oli garlic slice base then optionally add spring onions or ginger or mushroom or anything else you feel like.
Now before you finish cooking the pasta you need to prep some vegetables.
Main thing I always do is 1.5-1 volume of tomatos cut large as my pasta shells so they are big.
Then cut bell peppers, red onion (rinsed with water. If you planning to take it to work you need to do this or the acid leaks and everything smells of it.) Pasley, baby spinach or whatever else you can eat raw and you also like.
Now make the pasta mix it in the oil kill the heat then add a bit more pasta water than you need and add any spices you want now and over do it a bit with the salt pepper lemon paprika or whatever you like.
Now dump in all the vegetables and mix it with the heat off then taste it and then put it in Tupperware and your set.
The whole thing should be room temperature or lower as well so you can put it right in the fridge.
The only thing you need is pasta oil garlic salt and tomatos.
The oil and tomato juice coating is what makes it great cold.

Basically just either learn to cook some shit or cook some shit you already know how to cook, then double the recipe, invest in storage containers and whatever you cook, portion most of it and freeze. Do this several times and you've got enough quality frozen foods that you have the choice of either cooking something or just eating from the freezer, except it costs pennies on the dollar. Lasagna, spaghetti sauce, chili, meatloaf, sliced pork loin, grilled (or baked) chicken thighs, grilled (or baked) bbq chicken, etc. Then you just cook some rice or side or something and wa la. So good to pull out some bbq chicken, heat it up, nuke a couple tortillas w/ cheese and bbq sauce in like 5 minutes so you've got instant unlimited taco bell for a couple bucks.

For soups, save your vegetable trimmings (onion, garlic, carrot, celery, zucchini, squash, tomato) and meat bones that you cut the meat off of to make a broth for a nice vegetable soup. There's also a specific recipe for beer/cheese/ham/brotato soup that is seriously dope but it'd probably take me days or weeks to remember where I saw it. Lots of other recipes though.

Bacon, eggs and rice, canned beans, cheapo cheeses, cheap crusty bread, cheap Mayo, combine with any discounted vegetables, whatever you can get, experiment, try cheap Asian spices. Don't buy prepared frozen food like crap.
