I bought pork belly from WF when they sourced from Canada and it was a great mix of lean to fat for @$3/lb. They stopped carrying it and switched to subsidized US producers with an inferior product at 2X the price. I shopped around and found an asian market sourcing from Poland and the bellys were back to that same level of lean to fat at $3/lb. US agriculture literally fucks the consumer with carte blanche freedom nowadays. Be smart and shop around. Globalism is capitalism at it's best and gives you a choice of superior products at appropriate market prices. Natsoc is overpriced garbage for imbeciles.

I'm terrible at making anything look good

Pound of ground beef
Pound of jalopenos
2 cans of beans
Couple bell peppers
Large onion
Baby Bella shrooms
Garlic powder
Chili paste
Corn starch

Chili paste I make in bulk and freeze. Equal weight of passila, guajillo, and ancho roasted rehydrated and blended in beef broth.

Salt raw mushrooms set aside
Cook ground beef in small batches in chunks so it sears into chunks
Saute mushrooms in leftover fat. Don't flip them, or flip them only once 3 to 4 minutes both sides medium high heat.. Set aside with the beef
Slice peppers, and remove membranes and seads to adjust for heat desired
Toss in peppers same pot (in this case jalopenos but whatever you like) medium to medium high. As they soften toss in onion diced
After its all soft combine the rest of the ingredients (except corn starch) in same pot, mix, let simmer. Adjust seasoning to taste. Corn starch it up and serve over rice

Punch like spicy? Not really, I get my spicyness from whatever fresh chili's I add. Ancho is just a poblano dehydrated, and passila is I don't actually know what pepper but also not really hot. You can look this stuff up though. Some people like using anchos to bring up the heat though.

I’ll make a focaccia like this for Christmas and cut it in little squares to be served among the other appetisers.

Cheap, easy and good.

Here’s a secret: warm some EVOO in a pan with a garlic clove and let it become golden, let everything cool (remove the garlic) and throw the sliced tomatoes in. Let them go with low fire until they’re slightly soft. Gently squash them so they release part of their juices (don’t destroy them be gentle) in the oil then place the tomatoes on the focaccia and pour all the sauce over the focaccia while shouting MAMMA MIA.

This is the extra step that will make her wet, trust me.
