Last time I was in flyover land I found there were some new, shockingly good restaurants. Unsurprisingly they were basically empty all the time and the food was hilariously cheap. From what I'm told they are young chefs who cut their teeth in the civilized world and ventured out to gentrify.

The trick to eating well in flyover land is to completely disregard what the locals recommend and just research it online. If you're dining alone and dressed like a human (not wearing a MAGA hat or piss-stained sweat pants or local sports team apparel as most locals are), they will snap to attention when they see you walk in, and slave over your table and then the chef will come out to chat, asking, with feigned casualness, if you're a journalist or a restaurant reviewer from DA BIG CITY.

The problem is you have to get there first, and when you're there you run the risk of getting ritually murdered as part of a white nationalist militia initiation ceremony. I still recommend getting no closer than 35,000 feet from a flyover state.

Michigan misc- venison as lots of people hunt, freshwater fish like perch, lake whitefish or walleye. I’m pretty sure this is common in all the great Lake states.

Indiana:
pork tenderloin sandwich- An absurd sandwich that has a way too big pork schnitzel on a hamburger sized bun. It’s good, but weird in shape.
I don’t know that much about Indiana.
Illinois:
Chicago style hot dogs - hot dog with a lot of toppings: some include tomato slices pickle spear, pickle relish (neon), mustard, sport peppers, onions.
Polish sausage sandwich - usually sautéed onions and mustard on it.
Italian beef sandwich - shaved beef in beef jus on bread. They can dip your bread in the drippings too. How many times depends on if you like soggy bread.
Deep dish/ stuffed pizza. Pizza that’s basically upside down and the quantity multiplied. Toppings and cheese inside on bottom and a layer of sauce spread across the top.
Chicago thin crust pizza- what most people eat since a deep dish is very heavy. It’s just a very thin cracker type crust and they cut it into squares.
Ohio:
Cincinatti chili - and it’s applications. I’ve never had this.
Missouri:
Ribs? - I’ve never been to Missouri but I think they have bbq. It’s kind of southern there.
