I made some stew, it was delicious. Chicken stock, tomato paste, soy sauce, Worcestershire sauce, fish sauce, roasted garlic, ground jalapeno pepper, black pepper, thyme, bay leaf, celery seed, sausage, potatoes, carrots, pearl onions, all into the pressure cooker for ~30-40 minutes, add peas, mix together, and some cheese on top (gruyere).

I make the brine at the ratio of 5g kosher salt to 100g unchlorinated water enough to cover the peppers. It works as this is the 3rd year I've fermented hot sauce. I use a freezer bag filled with the brine (in case it leaks) to keep everything submerged. Since it's a brine, I don't worry about the weight of the peppers. However when I salt cabbage for sauerkraut, I use 2% salt by weight of cabbage w/o water.

I'm happy with it, except i scratched my forehead and of course i wasn't wearing gloves so my face was burning and turned red. Apparently capsicum is alkaline so using vinegar or lemon juice neutralizes it , seemed to really work

a couple months ago i made a big ham and froze most of it, including the joint with a lot of meat on it. posted about it in the FML thread and an anon asked me to post the lentil soup i was going to make out of it.

well, all ~20 quarts of soup are portioned in the freezer, so it's time for that post.

i made a 4x batch, so the pictures don't match the quantities below:

- 1 lb lentils, soaked overnight
- 1/4 lb bacon, diced. brown in pan. render as much fat out as possible
- saute 2 onions until transparent
- add 2 chopped carrots and 2 cups chopped celery about halfway through cooking the onions

- add 2 qts water
- add lentils (strained and rinsed of soaking liquid)
- 2 tsp salt
- 1 tsp pepper
- 1/2 tsp thyme
- 2-3 bay leaves
- add 1 large potato grated (forgot to get a picture of that)
- add ham bone with meat on it

simmer 3+ hours

by this time the soup looks noticeably thicker, the potato shreds should be dissolved, and the meat should be falling off the bone. remove the bone, strip the meat off, remove cartilage and connective tissue. add the meat and now cleaned bone back. cook longer. in my case i needed more meat so i added another 2-3 lbs from the chest freezer.

simmer until the lentils are soft enough and the soup is thickened fully. remove the bay leaves and bone.

this soup recipe has been in my family for over 150 years, give or take. it is smokey, rich, and filling. hope someone tries making it some time.

i froze all 10 containers pictured for thawing later this winter, it keeps well in the freezer.

I made a similar stew again tonight. This time I added some brown sugar, a whole cinnamon stick that I removed at the end, and beef stock in addition to the leftover chicken stock from last time. I also did it completely as a one-pot dish this time, rather than parcooking anything separately ahead of time. No roasted garlic this time though, used up everything I made last time and didn't want to wait.

Fish sauce is great, useful in tons of meaty/savory dishes. It's very strong so you don't need much but it can really enhance the "umami" profile of soups and stews, without overpowering or detracting from anything else. Usually not noticeable as fish sauce at the end, it blends very well.

Yeah I love them. The ones that get extra browned can be too crispy to easily blend with everything, so I often pick them out and eat them straight with a bit of salt. If it's going in a stew instead of mashed potatoes or something you can just mix up what you can and the crispy parts will soften and fall apart during cooking. I've started doing all my roasted garlic in foil packets, using a nonstick foil I bought, just at 300F, checking it occasionally after about 45 minutes to an hour. The nonstick foil makes it really easy to get nearly 100% of what you put in, I like this way much better than roasting in the heads of garlic, which always seemed wasteful - you can never get out quite all of the delicious roasted garlic.

The lower safe limit is somewhere near 1.8-1.9% so in practice, it's at least 2%. The upper limit I don't know, but some microbes cease to grow at 6.5%.

If the hot sauce poster provided how much brine he used and the feed volume in his jar, we could guess his %salt which would already be useful. As for the rest of the ingredients, as he said, he doesn't seem eager to "go anal" about it, unfortunately.

Yes, there probably is a scientific analysis that could establish optimal amount of brine per weight of vegetable which would involve calculating the water weight of the vegetables, ambient temperature, and a shitload of other variables, etc., etc. That might be worthwhile for those more autistically inclined, but the fact is fermentation of vegetables is relatively forgiving. Adding a 2%-5% brine to cover the vegetables and keeping them submerged works. But if you feel compelled to jump through a bunch of hoops by over complicating a very simple process, by all means, you do you.
