Tried my first one of those things at some new burger shack in town. It was too messy/big so I didn't eat it with the bread part. Honestly could have made a shrimp salad with all the lettuce they put on it. Should have gotten a burger instead since they looked better.

There's this place in Baton Rouge under the bridge over the Mississippi. Some sports bar with LSU shit everywhere. Their poboys are incredible. Not sure I really trust any landlocked state to have the good stuff. Fresh fried shrimp and a warm baguette...fuck yeah.

I want to like it more than I actually do like it. A cajun style sandwich with shrimp is a good concept but the flavor isnt amazing and the shrimp just fall right out of the sandwich because they're a bunch of small pieces and arent designed to be eaten while squished between bread

A good catfish po'boy is my white whale. I was working on a boat in my early 20s, we were docked north of New Orleans for repairs. Drove out somewhere to get something, and stopped at some roadside po'boy stand somewhere north and west of NOLA. God damn if that wasn't the best sandwich I've ever had. Fresh clean tasting crispy friend catfish, fresh veggies, softest french bread and the sauce.
I've been back to Louisiana several times, and I always order a few po'boys searching for that same experience. Never have been able to find that shop, and never have reached that 10/10 sandwich experience again.
