I kind if get where he's coming from, especially given his presentation style. It's not wrong for him to cook whatever he likes, but making a very technique-heavy youtube video where he acts like an authority on Mexican or Vietnamese recipes could look bad.

I think in general there are very different cultural approaches to cooking, and unless you're really immersed in a particular culture, or an excellent overall chef, there's not much value you can add to an 'authentic' recipe.

Equally I think he would be fine presenting anything as 'my take on X' rather than 'here's why you're doing X wrong'
