Why is it that homemade lox is never any good? I have watched numerous YouTube videos now of people making their own lox and you can tell it just isn't that good. Regular store bought or wholesale lox is fucking delicious and you can eat it straight but all these YouTubers are bullshitting around offering different variations that would make it better or w/e and you can just tell it's clearly nonsense. It tastes like shit because no one can make good homemade lox. How do the big time factories make it so good? Do they have special brining equipment? Is there a secret ingredient they use?

I've made it this way with a couple changes. Place a weight on the salmon while it's curing and in addition to rinsing it well, soak in cold water for 30-60 minutes to reduce the saltiness. I have a cold smoking setup so I cold smoked it as well. I thought it was every bit as good as store bought for a fraction of the cost.

Got it. In Scandinavia we make gravlax. It's basically cured salmon with dill.
