When you make your own, you control how it tastes. Tomato sauce has a wide range of possible outcomes; there are dozens of ways to flavor it. Personally, I dislike sugar in my tomato sauce, and would rather incorporate sweetness via slow cooked onions that are puréed with the tomatoes. It is hard to find a jarred sauce without sugar.
