Fried or as egg foo yung (green onion, salad shrimp, garlic, and bean sprouts) are my go-to methods. For the latter you can whip up a really simple sauce to go on top by combining chicken stock, soy sauce, and a touch of sambal in a saucepan. Bring to a boil and thicken with a little corn starch, then drizzle over your egg foo yung.

looks like some sort of pancake or waffle batter, but could also be a biscuit mix
not sure with the way it jiggles though, jiggles like castella, but the cooking time is far too little for something like that so it really has to be a quick bread
