Those (and many other) fries are 'jacketed' with a flour and seasonings mix. Copying it at home involved parboiling/blanching your fries, coating them while hot, cooling or freezing them a while, then cooking in oil. Kind of a pain in the ass. Just go to Arby's desu

At home, I only ever make 7, 13 and 16. They're the easiest.
In order of easiest to most difficult: short of overcooking them, you literally can't fuck matchstick potatoes up. Potato wedges I just blanch, toss with oil, then oven roast to GBD. Again: easy, but a little more to it than matchsticks.
Finally, pommes soufflés are just discs of twice-fried fries. They're the most difficult of the three, cuz you gotta have the right temps each time. Once you figger it out, it's still pretty fucking easy.
