Old people who've been chain smoking for 50+ years have broken taste buds -- all they require is a fulfillment of caloric requirements. Even the fried chicken isn't seasoned. It's crispy as fuck, but essentially flavorless.
I've honestly learned that the Japanese value diversity of consistency over flavor. Foods like uni and horumon are valued because of their unique mouthfeels, not their honestly underwhelming taste. You ever notice that all the restaurants serve jellies as dessert (even though they're virtually flavorless)? Or how parfaits have corn flakes at the bottom? It's because they need all the different feels in their mouths, and that's more important than intense flavor or spice. Even Japanese "soul food" like okonomiyaki is, if we're being honest with ourselves, bland. Most of the flavor from okonomiyaki comes from the sauce on top, which is entirely optional.

Easy. Japanese were an isolated nation that did not benefit from the spice trade and hence why their food has the same ingredients in nearly every dish. This is why China is regarded as the best asian country for cuisine and not china.

Koreans and Thais and Indians and Pakis dump chili and other cover-up spices onto everything so you can't taste the rotten ingredients they used. Same with some parts of China.

Americans have no idea how bad it really is. No one in china knows what the fuck beef and broccoli is or sweet and sour pork. Chinese food is disgusting. Literally the worst parts to eat of any animal. Makes sense because chinks are the race of humans closest to animals. They make disgusting noises when they eat, slurp everything, men in the streets lift their fucking wife beaters over their sweaty stomachs while laughing and chewing with their mouths full of food. 1. Japan before the Meiji era banned spicy food due to strong Buddhist influence.
2. Japanese food always has been salty and the Edo era central and regional leaders were hooked on sugar from the Dutch. Nothing drastically changed today in Japan.
