Lobster was eaten by poor people and prisoners in the past because of how abundant it was. Lobsters used to wash up on New England shores in piles 2 feet tall. Scarcity changes how people feel about food. Using past practices isn't really a great idea for trying to communicate something about food today. Butchers used to outright discard chicken wings along with the carcasses and look at how popular they are now.
