All of those things work.
Peel the bad bits off, just wash the rest.
Pearl onions and large onions give a different flavor.
Potato soaks up liquor, but still fluffy on inside.
This is the beauty of comfort cooking, all of those wonderful flavors and textures, mixed, but separate.
