I make a big ol pot of rice with frozen vegetables and little pieces of meat in it. Then I put them all into Tupperware containers and freeze them, I’ll heat them up during lunch and savour the aroma and taste. Sometimes I’ll put some avocado on for calories but like I say eat to live don’t live to eat.

Most often leftovers. Depending on what's for dinner, I'll intentionally cook extra for lunch. I like to microwave the most pungent foods right in my office. Keeps the students away during office hours.

I meal prep breakfast and lunch.

I blend shakes and prep sausage egg and cheese sandwiches and freeze them, so all I have to do is microwave it when I'm ready.

Lunch is usually dinner's leftovers as well as snack-foods like cut up fruit and veggies, chips or cheese and crackers and stuff like that. Sometimes I'll pack another smaller lunch box full of finger foods, for when I'm hungry but don't have time or desire to eat a solid meal. Boiled eggs are a great option, because they are good protein and they're satisfying.

I like to have lots of drink options, so I keep a gallon of water at my desk and some of those powder drink mixes of various kinds. A few boxes of tea and coffee.

I have 6 of the pic related. I pack up any kind of leftovers of my dinner in these vented microwaveable dishes, if it would reheat well. I pull them out of the freezer per my whim. Indian korma like curried squash and chicken, side of rice, sprinkle of onions on top. Square of lasagna, enchiladas, cornmeal-pork cuban tamales with hot sauce, soup, chili, mashed potatoes and roast beef with peas, egg noodles and paprikash and dollop of sour cream before I seal it. They have very strong lids for no leaking. Anything goes if moist enough to be nuked.

I vascillate between bread types, meat types, cheeses and garnishes. Various choices there at the deli counter. Getting an onion roll means I can nuke my sandwich 10 minutes and warm up some ham n cheese for a cold day. Wrapping up smoked or spicy turkey in a Flat Out means I can cram in more veggies, a spread of cream cheese, and something strong like arugula. Apple, grapes, banana, carrot sticks, mini cukes, mix it up.

I often roast extra meat or veggies when baking or grilling, and morph it into a cold dressed pasta salad, couscous or taboulleh or just top a bagged salad with it.

Occasionally, I poach chicken breasts or roast a turkey breast, and cube it into salad. I like a b basic green onion, celery kind of day 1 recipe, then stir in mustard-curry-mayo and dried or fresh fruit for day 2 to change the flavor. Egg salad morphs day 2 as well.

For emergencies where I haven't shopped or just to keep in my desk, I have a 2 cup soup mug with vented lid, and I can pack a can of progresso soup (ring opened cap), and it fits perfectly the whole can of soup on days I have nothing in the house. Crackers, seasoned croutons, or a piece of bread to tear up and garnish it. Wedge of lemon or lime, or some herbs like cilantro or basil freshens it up. Nature Valley or a giant Aldi/TJs trail mix on some other days.
