I've got a pound of lunch meat I'd like to use before I go on vacation because I don't want it to spoil while I'm away.

Aside from making sandwhichs what are some other, creative ways to make use of lunch meats?

chop up and mix into choux dough for gougeres
or if that’s too much work, buy Pillsbury crescent roll dough, flatten out, roll up, slice, then bake into a version of pepperoni rolls, but with bologna

Never heard of Gougeres before this but interesting to know in the future. I'll try the pillsbury dough though, that seems like it'll be expediant.

I would, but then I'd have to buy more eggs and milk, saving grocery shopping for after vacay

Chop it up and add it to an alfredo pasta or add it in with some carbonara. If thats not your speed chop it up and throw it in some chili.

I solved this exact problem yesterday by frying a load of chopped ham, and using it as a filling for a savory pie.
