Cast iron is weak in several areas

A. It heats very slowly, making quick tasks like frying eggs, sausages, reheating painfully slow.
B. Things stick to it even if you season the pan well.
Tofu, cheese, egg, noodles, all your usual offenders.
C. It's expensive to buy, many people have other priorities in the kitchen.
D. Hard to adjust the heat with gas, induction fucks them.

Cast Iron is superior for certain tasks. If I'm going from range to oven, such as when making a steak, it's ideal. If I'm searing something like a raost, I'm not pulling out cast Iron. I'll get a better sear from Stainless Steel. Eggs, or grilled cheese are going in non-stick. It's just about understanding your tools and the appropriate time to use them. Of the 3, if I didn't have space for 1, the Cast Iron gets voted off the island, because of the 3, it provides the least specific benefits. I can just as easily sear a steak in SS, and place it on a broiler rack for the oven. This might even be more convenient, as I can make a pan sauce while the steak finishes in the oven.

It's all you need in the same sense any slab of metal with high walls is also all you need. However there are applications to which cast iron, stainless, carbon, copper, or whatever is technically better suited. The difference being enough for you to give a fuck is a separate matter.

rub it dry with a paper towel, if there is too much sediment stuck you can use a wire sponge or something like that, finish with another paper towel with just a drop of cooking oil to prevent rust and that's it, been doing this for years and my pan is perfect every time, even the food tastes better.
