I go by what I see and experience, and personally, I've had very good experiences with buying food. I don't freak out over toughing eggs and chicken, because it's not a concern, but I think at a certain point in time it was a huge deal. i'm still here, I did get a workable system going which allows you to make whatever shape you want and bisque fire them, but after the olive oil incident i'd advise against direct cooking as the salt absorbs and essentially superheats any liquids, not the greatest for direct cooking but still amusing.
pic related is a very charred very bbq sauce contaminated salt bisque dish, the bars of yolk were a success, both the cracked and uncracked worked well.
they're still in my fridge after being cut from the dish, the salt is still on my microwave to be reconditioned, the yolks show no sign of breaking down and currently have a dense wax-like texture to them.
It's quite possible refrigeration isn't needed once they've gotten this dry
powdered eggs have a shelf life of 5-10 years without refrigeration, and since these lack the more soluable whites, as well as the lessened surface area, they could potentially last a lot longer as they sit.
really quite odd when you think about it, but if these were pasteurized eggs i'd used or fairly high quality ones, they could be eaten raw like rations, though I'm not sure what someone who'd lived off eating nothing but dried eggs for a month would be thinking about them

Like red meat that has no fat, a much softer texture with little chew, and is a tad sugary. It's the iron content that makes it comparable to meat.
