Follow a recipe or buy a mix (Kodiak Cakes are a good healthy option).

Pan fry in butter. Make sure the pan is hot before starting. People that say the first one is always a throwaway are not letting the pan heat up. Don't overmix. Just mix until all the dry ingredients are incorporated in liquid. A clumpy batter makes the best pancakes.

It probably makes a difference, but to me making pancakes should be a brisk affair where you don't stop to measure anything. If your second pancake doesn't turn out well (the first pancake is often a mess regardless, usually an issue with inadequate pre-heating), add a little more flour to the batter. After a while you'll get it right first time every time.

Okay here we go take, 1/2 a cup flour, 2 tsp baking powder, 1 table spoon brown sugar, few tsp of cinnamon, pinch of salt, add one egg, mix, a bit of oil, then add milk slowly while mixing until you have a pourable batter. Make sure it's not too thin.
