Beef stew without beef stock/broth. Is it possible? Thinking about red wine and tomato maybe.

Why would you want to? If you don't want to spend 2 days making it, then buy a Knorr gel pot. They're cheap and despite the memes they're legit good and only surprassed by homemade or something 10x more expensive.

Do you have any chicken/vegetable broth? Flour your beef and cook it for a while in the searing step. You could also cook a roux pretty dark to get the color and nuttiness. red wine is good, use tomato paste - the low moisture content sometimes lets you get some degree of caramelization. if you have mushrooms that's another way to get more earthy flavor

My grandma made baller beef stew without beef stock/broth, without red wine, and without tomato. She relied purely on disintegrated onions. The key is to cook it for over 3 hours. 4 or 5 hours, ideally.

Been thinking about that one actually but I'm not sure if I can put potato and carrots in it. Every time I'm tried to make a wine sauce it becomes too rich unless there's cream in it, and I feel like vegetables might soak up too much of it. As braised beef it looks good though, don't know if I can make a stew out of it though.
