i just made some with dried peppers because i had a buttload laying around came out pretty good once i adjusted it.

2 ancho
30 arbol
8 guajillo
1 bell fresh pepper
2 big cloves of garlic
half tsp of cumin seeds
1 tbsp of salt
4 tbsp of brown sugar
2 cups of white vinegar

i toasted the dried peppers then soaked them for 30min to rehydrate them then tossed out the water and boiled all the peppers/cumin/garlic in vinegar for 15min then pureed it into a paste then added the salt and brown sugar and gave it about a week to blend together and it turned out pretty good. im still working on it though

good vinegar and balance. build layers with your flavor, not just in your face "fuck you" heat. a bit of fruit goes a long way. i use peach/habanero in a spicy jam that's great for crabcakes or pork and mango/habanero in my sauce for fish tacos.
