Can someone explain seasoning to me?
I'm new to cooking and I have a lot of spices, but I'm still curious about certain things.
What counts as a seasoning? Does it have to be a powder, or do onions, garlic, shallots, etc. count as seasoning?
What are some seasonings that you like in particular, and ones that you think every cook should have?

Seasoning generally means salt but people probably use the term to mean any flavor enhancement.

Point being, I even went on a Chinese site that lists a bunch of (what they consider to be) seasonings, and it was mostly things like vinegar, shaoxin wine, soy sauce, etc.

Well, there you start getting in to competing ideologies.
Some schools of thought consider "seasoning" to mean exclusively the use of salt, and that anything else is instead a flavoring.
Other models would count a flavorful oil as a seasoning.
Still others would acknowledge that a flavorful oil can be used like a seasoning, but insist that it is instead a condiment. These same models also lump aromatics into condiments so they're pretty fringe.
