Easy Italian recipe.

In a pan heat olive oil then put crashed garlic glove and cook untill it's golden.

Put finely chopped tomatoes in the oil and salt, heat on low/medium for at least 20min half covered

Brown 1lb of 80/20 ground beef in a pan at high heat with a splash of light olive oil, salt, and black pepper. You want it seared brown like pic related, not just grey. The flavor comes from forming a seared crust. Use a big pan and avoid crowding it. Meanwhile, in a stockpot sweat 1 large onion, 1 small carrot, and 1 celery stalk, 3 garlic cloves, and a handful of fresh parsley, all minced. For a heartier sauce also add 1 medium zucchini, also minced. Salt and pepper lightly. Sweat at low heat covered for about 30 minutes or until the onions turn soft and transparent. Add in a 16oz can of crushed tomatoes and a 6oz can of tomato paste. If tomatoes are in season, use 4-5 large tomatoes freshly crushed and the tomato paste. Drain and add the beef too. Season the sauce with salt, pepper, oregano, basil, and thyme to taste. Lastly, stir in about a tablespoon of extra virgin olive oil and maybe some water if the sauce seems too thick. Bring to a boil, then cover and simmer for at least 1 hour. Bone apple teat.

Also a note about using fresh tomatoes. Roma or plum tomatoes work best, but hot house tomatoes can work if they’re good and ripe. Never use beefsteak tomatoes for sauce, they are for sandwich toppings only and lack the flavor intensity and sugars needed for sauce. My instructions are for hot house tomatoes, but plum and Roma tomatoes are much smaller so you’re gonna need nearly twice as many as the recipe calls for.

It's not only the germans that sees nudel/noodles as the general term for dough shaped into certain forms. Oxford dictionary defines noodles as: A very thin, long strip of pasta or a similar flour paste, eaten with a sauce or in a soup.

Brown ground meat over medium high heat (either all beef or a mixture of beef and pork), season with salt and black pepper while doing so, then remove from pan, then sauté diced onions for 15-20 minutes in mixture of oil/butter, season with salt. Then add diced carrots and celery, season again with salt and cook for another 15-20 minutes. Then add garlic, sauté for 3-4 minutes. Then add beef as well as juices back into pan. Add beef stock, diced tomatoes, a pinch of sugar, Worcestershire sauce, couple bay leaves, some sprigs of thyme and a dash of cream or whole milk. Season with salt/pepper then stir thoroughly and bring to a simmer. Once simmering transfer uncovered to the oven, about 320f and allow to cook for 2-3 hours, checking every hour. When the sauce is the right consistency remove, season to taste and stir through a knob of butter. Leave to rest covered for 30 minutes then eat.

For red sauce, Marcella Hazan's Tomato Sauce recipe is the best imo.

1 can whole tomatoes
5 tbsp unsalted butter
1 onion peeled and cut in half
A pinch of salt

Place all ingredients into a saucepan and bring to a simmer, stirring and crushing tomatoes with a wooden spoon. Cook stirring constantly for 45 minutes until thick and delicious. Remove onion and serve.

That’s it. Ideally you use really good tomatoes, but if yours are too acidic then a pinch of sugar is okay.

You will find lots of italians, especially in the north that will insist that garlic and onion should not be mixed together in the same dish. But of course, Italy is big, and they have many heated arguments about what is correct. In Napoli, it seems pretty common to combine them.
