Spicy and tangy at the same time.
But the thing is that kimchi tastes vastly different when it's fresh, when it's kind of fermented, when it's fully fermented and when it's over fermented.
Most people like it somewhere in the middle, and most people don't like it when it's fresh or over fermented. When it's over fermented, it's good to use in stews.
Kimchi is also one of the few foods where buying it commercially tastes better than homemade. 9/10 homemade kimchi won't taste as good as buying it from people who makes it as a specialty.
