Jack links is really the only brand I consistently enjoy. They need to use less sugar, but it’s not dried to shit and has some moisture in the bite. Really don’t buy anything else other than that. Probably going to buy a dehydrator and just start making me own.

There's a place in the central valley of California, west of Lemoore, Harris Ranch. They smoke BBQ daily and smoke beef jerky. It's some of the best I've had. I don't live out that way anymore and honestly, the beef jerky was one of the very few joys of living out there. If any of you find yourself on a road trip out through that Godforsaken place, stop at Harris Ranch and try the jerky. The only reason I lived out there was because Uncle Sam said I had to.

This is some jerky I made with outside round that was on sale.

I have gut issues and don’t handle carbs well so my recipe is low carb, you might want to add sugar. Personally I don’t think it needs sugar.

4 TBSP soy sauce (tamari)
2 TBSP fish sauce
1 TBSP black vinegar

Then I dipped each slice into this mixture before stacking them in a bowl, covered and rested overnight. The next day I put the slices on racks in front of a big industrial fan and it dried out perfectly. No need for a fancy dehydrator, just some racks and a big fan.

Duke's is a good brand and I've had most of what they make. Recently on a trip I got to try their chorizo shorties and they were fantastic (had lime and cilantro mixed in). I always buy a bag of the original shorties for trips and I've had the Hatch green chiles version which is pretty good for a spicy kick. However on my last trip I found this crap pictured in Arkansas and my god..

It's absolute SHIT. I swore to god it was rancid it tasted to bad. I checked the date and it says "good till 05/2020" and even has the little silica gel bag in there for freshness. The package wasn't damaged it's just the composition of the flavor that make it shit. It's got this cloying sweetness to it and the sweet stench it gives off it nauseating. I'd give it to a dog but I'd feel horrible for subjecting another living creature to eating this crap.

I dont have accurate measurements, its done mostly by eye, so take this autistic description as you will
>2 blocks of cream
>half of a small bag of shredded extra sharp cheddar
>2 bundles of green onion, chopped finely
>1 whole jar of dried beef, finely chopped, this is where if you wanted to used beef jerky you would blend up about 1/2 a cup to 3/4 a cup of plain jerky
>1/2 a can of crushed pineapple no juice, add a splash of the juice after
>1/2 a jar of pickled jalapenos, finely chopped, add a splash of the liquid

Mix it up really well and let it sit in the fridge over night so all of the flavors have a chance to soak into the cream cheese

We use club crackers, but that is due to preference

If you're ever in Texas and pass by one of these, stop in, especially the larger locations. They have a meat counter in back that is bigger than most grocery stores meat depts, dedicated to nothing but jerky.
Get some of the by-the-pound stuff fresh out of the case. They wrap it up in butcher paper like meat cuts. Once you've had this, you'll be ruined on other jerky, nothing else compares or comes close. Hopefully you know someone in TX that can buy it and ship it to you, the pre-bagged stuff just isn't the same.

Kickass is probably the best I've ever bought, but it's expensive and hard to find where I live. I typically make Alton Brown's jerky recipe, blowhard dehydrator and all, but only use half a teaspoon of red and black pepper.
