/ck/ i need you expertise, i made some homemade hot sauce and its too vinegary. How do i fix it?

i used dried peppers because i had a fuk ton of them.

20 arbol
6 guajillo
half tea spoon of of cumin seeds
all toasted then soaked in water for 30min to re-hydrate then, dumped the water then added 2 cups of vinegar, 2 big cloves of garlic, a bell pepper and brought to boil then simmered for 15min. Added half tea spoon of salt let it cool and blended it up into a puree. Smells great but WAY too vinegary....wat do?

Leave it in a bowl, covered with mesh or something to keep shit out of it. Vinegar will eventually evaporte out. You can accelerate the volitization with heat.

Yeah. Luckily, you didn't do this with salt. The only solution to that problem is making a bigger batch.

You can add a little baking soda to cancel the acidity, but be careful since it will leave an off taste if you add too much.

i'm right on the edge with the salt, that kinda why i added the bell pepper hopping is would calm down the vinegar and salt
