I just started dating a girl who's a vegetarian and I'm a sophisticated mixed eater. We hit off wonderfully, but cooking together has posed certain problems. See, I don't want to give up meat completely and she doesn't demand it, but I'd still like a steak when we eat out, or company and acceptance when preparing meat.

Are there any anons in relationship with such setups? How have you handled it?

Uh.... have you talked to her about this? This seems like the most simple process. I have friends who are vegans, and most of them aren't militant about being around meat. If they were, we'd have to have a discussion, but they probably wouldn't be close friends.

So dating? That's a conversation too. I couldn't eschew all animal products even if it was for my dream girl. I could maybe go vegetarian when around her, but that would include dairy, so... up to you to be an adult.

I have been with a vegetarian for 6 years. She is okay with me eating and cooking meat, so long as no meat touches her food.
It's not that big of a deal, in fact I think it made me a better cook because I had to learn how to make meals where meat isn't the focus point.
I try to look for vegetarian restaurants about half the time we eat out because she appreciates it

if you two date for a while, get serious, even get married down the line then you're going to be eating 3 meals a day together, plus snacks and drinks.
if she's so vegetarian that she can't even drive through towns that have "ham" in the name then you're going to be constantly arguing bullshit over your mealtimes, a time when you both should be enjoying yourselves instead.

I'm in a similar situation. I very seldom eat meat in her company which she seem to really appreciate even though she does not demand it. Family dinners and traditional meals like christmas and midsummer are the main exceptions. I used to eat more meat when she was not present but now I eat almost exclusively vegetarian out of habit and convenience.

Decide now whether you're pathetic enough to go vegetarian for a woman. It's incredibly obvious she's already putting pressure on you (but pretending she's not). It will get worse and worse as you get more invested in her. You will eventually become vegetarian or break up, guaranteed.
