Any bake fags here? I'm looking for tips on preshaping my sourdough. I'm having to refrigerate my dough after bulk fermentation before I preshape otherwise I can't get a tight shape/preshape and my loafs just don't rise. I use good high protein flour,strong levan and about 80% hydration (mostly tartine) ideally I'd be preshaping without the extra refrigeration.
