Almost, you need the one you can use for home defense though. I used a Norwegian one with a hard blade once and took the tip of my finger off, so I always go with wire.

I once nearly killed myself using on of these.

Really depends on the type of cheese and what you're trying to do. Those are great for nice even slices
>>13150554
This is better for separating large chunks of cheese cleanly or slicing very soft cheeses. Nothing better for cutting open a wheel of brie.

These knives are incredibly viable as well, and what I usually reach for when I'm prepping a cheese plate.

I have no problem believing that.

The problem with these is that you have to have the cheese significantly elevated above the work surface to get your knuckles low enough to put the wire all the way through. Also, it's nigh-on impossible to get even slices going the long way across a block, like the top of the block in the referenced photo. For the a lot of cheeses, though, and used the right way, the garrote is superior to all others. Plus, as the referenced anon points out, you can kill a bitch with one of these much faster, safer (for you) and cleaner than a knife.

I'm interested in this. What makes it good?

For firmer cheeses it reduces the drag while slicing through it. It makes for cleaner, easier cuts.
They also make great knives for slicing tomatoes and other soft things.
Don't use it for really soft cheese like brie though, it gets stuck in the gills of the knife.

they're fine for soft cheeses as long as they aren't super sticky ones like brie
I don't think I even own any cheese knives right now, i just use a long thin knife for sticky cheeses
but ones like pic related are amazing for soft cheeses without any of the problems
