Sautéing is using high heat and little oil to quickly finish cooking something and give it some nice maillard reaction that you don't get from just steaming or boiling. You can par boil some veggies put them in an ice bath to stop them from cooking more (blanch and shock) then sauté them up. You can sauté meat, too. But since it's a quick, high heat method, you want it to already be partially cooked. If you were pan frying it then you would use a medium heat and more oil and cook the entire thing through.

Organic stuff usually tastes better for a good reason. As fas a plants, when they are fed highly nitrogenated soil and covered in pesticides that make them never fight for life, they idverate all energy to growth. That's why they get large but tasteless. Conventionally grown stuff are also comparatively horrible for the environment. They have somewhere around 20%-60% more antioxidants, too. So there is a decent reason to get them especially if they cost about the same, which they do for me at Sprouts over Smiths/Vons.With that said, I'm not going to spend like $8/pint of strawberries like at Whole Foods. Brit here, pounds are used by NOBODY these days apart from my grandma's generation. She's 91. Every single recipe you see in a British cookbook published in 2019 will be in metric units. None of the food you buy in supermarkets will be in pounds/ounces, it's all in metric. Sugar is sold in kilogram bags. Everything is sold in grams and kilograms.

There are only a couple of food/drink related things where we still sort of use imperial. The first is milk; it is technically sold in metric units like everything else (I think legally everything in a supermarket must be sold in metric measurements), but the bottle sizes are effectively imperial units: 1 pint (568ml), 2 pints (1.136L), 4 pints (2.272L). Bear in mind British pints are slightly larger than American pints so those conversions are only for British pints.

Then the only thing where I think food/drink is legally sold in imperial units (unlike milk which legally must be sold in metric, but is just using metric approximations of round imperial measurements) is beer in pubs. Draught beer has to be sold in either pints or half pints I think. But that's basically the only thing, and I would not be at all surprised if it moves the same way as milk soon. All other alcohol is sold in metric (spirits measures are 25ml / 50ml, a small glass of wine is 125ml, beer bottles are 330ml, beer cans are usually 440ml, etc.).

I don't even know how many ounces are in a pound, is it 16? For my generation (late 20s here), we never used pounds/ounces. For someone my age, the only metric/imperial conversion we'll know is that a pint is 568ml. Because when you're buying beer in a supermarket as a teenager, you want to know the value compared to pints in a pub.

Also, stone for weighing is becoming less common. Yes quite a few people still use them, but kilograms are more and more common these days. Pretty sure the health service uses kilograms predominantly. And metres for measuring height.
