The whole "white people don't be seasoning dey food" meme is VERY true here.

I worked in a cafeteria kitchen and got a complaint one day from a regular that our beef and noodles was too spicy. Beef and noodles. Too spicy. The only spice we put in them was powdered pepper.

If you know where to look you can get some surprisingly good Mexican food, but it's not like Mexican food is particularly hard to make.
