Horseradish is used with strong flavors. Chicken doesn't cut it. Beef is a popular choice. Something fatty. I guess that's why wasabi stands well against certain fish. Pork is probably too mild? Has anybody tried it against lamb?

It's used to make cocktail sauce for your shrimp.

Put some ketchup in a bowl, add horseradish to taste, add a splash of lemon and some worcestershire suace, and stir it up well.

With a little experimentation, you can do much better than with the crappy cocktail sauce at the store.

That said, it does better with a less processed horseradish sauce than Inglehoffer. You want it to be less smooth -- more chunky.
