Make broth (pho is a good choice). If you own a food grade bone saw, cut them in half lengthwise and roast the marrow with some garlic and rosemary. Spread on toast.

I once got my monthly supply of beef bones for stock from my butcher, I roasted them up, forgot about them a little to long.
Took them out and noticed all the marrow oozing out, I ended up eating about a 1/4 lbs of marrow... I felt like shit after so rich.
