Corn has no nutritional value off the cob like that. It has to be treated with ash or like or something alkaline first. You wouldn't want to live off corn that hasn't been nixtamalized, but sweet corn on the cob with some butter and salt or crema, lime, and tajin is incredible.

Different kind of corn, and corn syrup is made by splitting the starch. It used to be done with pressure cooking and hydrochloric acid, but is now done commercially with a different method
