I want to make a seafod gumbo, should I put sausage in it or not?

Since you already call it a seafood gumbo, as in seafood-only, I'd say no. Don't put it in.

If you're new to a dish you generally want to make the simpler version. Not that sausage makes it more difficult, but it makes the flavour profile more complex.
Make a simple gumbo at first and see how you like it and what you like about it, then add on from there when you make the next one.

Why wouldn't you always brown your meat when making stew? It's bonus flavor, no reason not to.
