It's extremely easy to make a restaurant unfriendly to fat people to the point where you will likely almost never have to deal with anyone who is truly obese.

All you have to do is run a 4 star gourmet restaurant with prices, and a dress code, to match. This keeps out the poorfats (the majority) because even if they wanted to try a taste of the high life despite the price, they likely don't own the kind of fine clothing you require.

To further weed out fatties, keep portion sizes small and do not serve anything too decadently unhealthy. Enforce a dish limit per customer under the guise of "ensuring chefs can put their 100% into every dish." DO NOT OFFER SODA. If fatties can't fill up at your restaurant or indulge a particular craving, you will drive away the middleclassfats (think: boomers), who can afford to dine at your restaurant but now won't.

Unfortunately you can't completely eliminate richfats without compromising service or quality in such a way that will ruin your restaurant but thankfully the rich usually want to live as long as possible so they can continue exploiting those below them and reaping the rewards for years to come, so they try to get in shape.

Because a huge part of the reason for obesity in America is due to shitty unhealthy food being cheap and easily accessible to the lowest common denominator, the simple act of having high prices will keep out the vast majority of fat people. The only fat people you see who actually eat well (high quality food) are chefs and the rich.
