I think we reached a consensus on this before. Some soups and stews as well as chili and some curries are okay or even a little better a few days after when cooked. There is nothing wrong in principle with cooking or preparing food in advance, the problem is that most foods objectively taste bad after just a few days, let alone a week or two.

If we’re honest though, some foods are okay even frozen. Making breakfast burritos and freezing them for a quick breakfast is an example of prep done right.

What’s wrong with a lot of these meal prep types is they seem to almost specifically choose foods that will taste bad and even be dangerous if kept in the fridge for days: unsalted, inspired plain chicken greens and rice is just the archetypical example of a food that should absolutely not be kept in the fridge for more than two days, tops and yet some of these people will keep it hanging around for 5, 7, even 10 days or more.

tl;dr some foods are okay prepared in advance, but most aren’t, and mealpreppers more often than not overeastimate how long foods are palatable or even safe in the fridge.

Besides which, for the really time-pressed person there are healthy alternatives to leftovers when you want to eat but hate having to cook. There's a million different things that you can freeze and reheat and keep in your fridge for days and days that aren't shitty veg that are going to be limp mush in 2 days and chicken breast. Stews, soups, and most kinds of curry are all perfectly healthy, actually add some variety, and can be frozen or just kept in the fridge for a while. Meat and veggie pies are delicious and you can just bake, freeze, and pop in a toaster oven for 11 mins when you want it, wrap in foil and warm it up a bit at work. Shit is as crispy the day I made it. I make a dozen at a time and bring one to work every now and then to mix it up. You can even fold/wrap a million different dumplings/dim sum (gyoza, rolls, siumai, etc) and freeze in batches of 5000 and just steam/fry it the night before or day of, takes like 10 minutes. Braised meats always stay good for a few days as well. That isn't to mention obvious shit like freezing uncooked breaded chicken/pork for frying or baking, pasta sauce, and all that.

Nah, you can mostly Google what's good to freeze and what isn't. For stuff that's iffy or doesn't have many results I just do a little more research on anything similar or with the same worrisome ingredients.
I freeze gyoza, lumpia, and siumai raw then cook normally. It only takes a minute or two longer than fresh I think. Just make sure you freeze them standing up on a baking pan or whatever first so they don't stick or get squished when you toss them in a bag.

There are lots of good tofu dishes out there, the Chinese in particular do nice sweet tofu dishes that are crispy on the outside, smooth and creamy on the inside which is really nice if you’ve ever had it. A lot of Korean food is meh to me but Korean sundubu makes a great warming winter soup.

Plus it’s kinda weeb but I actually like natto. Soy milk is also occasionally a decent alternative to cow, although even as an alternative milk I prefer almond or oat.

I guess what annoys me about the InfoWars/pol soy meme is that it totally disregards the tradition of soy cuisine that predates the urban hipster thing. It also seems a bit childish IMHO to never give a food a chance just because some people you disagree with politically happen to also like it.
