Best dessert I've ever had was a cheesecake with a digestive biscuit base and wild berry jam on top - made by an Italian lady we met in Tuscany, even got the recipe from her:

For bottom
1 box of digestive biscuits
100g hot butter
4 tbspoon brown sugar
You mix all together with a mixer then put everything in a hinged mold about 24 cm and press with a meat tenderizer.
Put in the freezer.
for the filling: 500g Philadelphia cheese, 400g fresh cream, half lemon juice. whip the cream very hard, almost butter, add the Philadelphia one tablespoon at a time and finally the lemon juice.
Add the cream to the biscuit and put everything in the freezer. When hard add fruit of the forest jam then freezer. 4 hours in frig before eat.

Fucking ridiculously good. Gonna make it in a couple weeks time, can't wait.
