The back story is interesting - During the excavation of King Midas Tumulus's tomb in Turkey, they found 157 bronze vessels included drinking bowls, jugs, and large vats, which were believed to have been used for the King's funerary feast. By chemically analyzing the organic remains inside these vessels, archaeologists were able to determine their contents. It was found that wine, beer and mead were mixed together and drank during the funerary feast.
So they recreated this blend and it's a fav of mine.

It's not wrong. It's a cycle. Your palate keeps adapting to new flavor profiles. I'd recommend buying and drinking these three bottles, or something similar, in this order:
- oude gueuze (Timmermans is good, but there are bunch of good ones)
- flanders red (Rodenbach Caractere Rouge or Alexander for a staple)
- trappist (St. Bernardus abt. 12 or Rochefort 10 should be accesible)

Do it in this order, and you'll go from something acidic and refreshing (like a fino sherry meets champagne) in the oude gueuze to a perfect harmony of slightly sour red fruit to something that'll fill your palate with malty richness and top up your alcoholemia. From acidic and refreshing to sweet and fulfilling in three top of the class belgian steps. And a bit of a buzz aswell. You'll look at IPA differently after this experiment.

Some are good at marketing, some are good at brewing, but some are the age old home of some very particular strains of yeast, and THAT is were the magic happens. Beer is alive. A living fossil of sorts. It's a thing of beauty.

Me too. Actually liked it more than the Rochefort 10 I had last week. It was less sweet and more balanced because of that. It seemed to me that the very slight "richness" advantage of the Rochefort was due to this extra residual sweetness, while the Bernardus came off as a perfectly crafted beer in comparison. Also the mouthfeel of the Bernardus was perfect. Can't get Westvleteren in my neck of the woods, but maybe some day. As of now the Abt 12 is the best trappist / quadruple style beer I've had.

I've never had that one, but I don't typically buy fullers products. From the examples I've had a barley wine should taste like dark fruit, figs, dates, and the alcohol should burn like a cognac. The style usually doesn't hide the alcohol well, unless its a really expensive brand, that's why I mentioned Angel's share or tom hardy's. It's pretty chocolatey, but it's good over all. The process? Get some chocolate grain mix (cracked) and sparge it and create your wort.Then your gonna add 3/4 cup (per gallon) of your favorite maple syrup, fuggle hops, and if you want some extra cocoa nibs. Then boil that shit. For like an hour then add more hops. Cool it down put it in a fermenting bin or carboy. Wait like 2 weeks for the fermentation process to complete. You can wait additional week if want to smooth out the flavors. Any way when bottling time comes around dissolve 3.5(per gallon) tablespoons of your favorite maple syrup as the carbonation agent. Wait a week or so now you got what I made. I glossed over some stuff, but you got the general idea.
