It is defined as cocoa butter, or cocoa fat. Cocoa solids are everything else from the nib (when dehydrated, they become cocoa powder). If given the time after processing - basically not turned into chocolate - the cocoa butter will separate from the cocoa solids, and float. It's not very common to use this in confection, but it can be treated like invert sugar, or even to cause some "white chocolate" blooms.

I mean... they absolutely do. You can get vastly different wines from different grape varieties of the same colour. Purple grapes such as Malbec and Merlot are quite different, as are the wines they produce (and some "black" grapes are used for sparkling white wine, just to add to the fun). The sweet gewurtztraminer grape is pink-ish. It's wine is on the lighter, fruitier side of white. Pinot Grigio comes from a grape that looks like it should make red wine. Even chardonnays and pinot blancs from across Europe and the US can make vastly different wines despite everything but the "terroir" (soil contents, weather, and yeast growing on the skins of the grapes) being nearly identical.

Cocoa is much more homogeneous. There are a few varieties that will produce purple or red nibs, or much larger amounts of fat or solids, but what makes it to market generally all Forastero cacao grown in similar conditions. Trinitario might start to climb into the market more if Forastero suffers a blight or something, but you'll notice a lot of people saying "This chocolate tastes different than it used to." despite the chocolatiers being so clinically careful to keep their fat, solid, sugar and dairy ratios tight... that said, you wouldn't notice a huge colour change - that's almost entirely from changing the ratios of ingredients... much more akin to keeping the skins in the mash than switching out grapes.
