whats your go-to way to cook bringals?

is there a way to stop them from turning brown?

I really like baba ghanoush, but it's a giant pain in the ass. I honestly just like to do good half inch slices, season with salt and pepper, brush with olive oil and grill. Then I stack it with smoked mozzarella, basil, and tomatoes to make a sort of eggplant caprese. I dropped the whole, salt and press to remove excess moisture thing long ago.

Idk wtf that foreigner shit is but I usually make fried eggplant. Slice it, dredge in egg, then coat in a 50/50 mixture of breadcrumbs and grated pecorino romano. Fry until golden and serve with a home made marinara. It's very comfy

I cut it up, into a pot, add some butter, and cook on low jeat until it turns sweet and soft. Sprinkle some fish sauce on top and it's perfect.
