Why did taco bell get rid of the quesalupa? It was my favorite thing on the menu, but they only had it for a month or so and have yet to bring it back.

That is actually a really good question. I don't know why fast food franchises discontinue items, but now I'm curious. Maybe they aren't selling well enough to turn a profit for the added ingredients? Maybe they were a limited run to test the climate and see how particular types of items would sell? Here's to hoping we have an expert lurking about who can shine some positive light on the situation.

You figured out most of it yourself. Fun fact - every chain tests items in Columbus OH before taking them national. As you say, sometimes it's tried and failed, but a constant stream of new items is also done for marketing purposes so they're often meant to be temporary.
Cost is another factor. McRibs are seasonal because the price of pork dips and that's when they buy a fuckload of it.

It increases the public's interest an item if you take it away and give it back later. They remember how much they liked it the first time around and decide to buy it again since it's available for a limited time only. If it does really exceedingly well, they might add it onto the menu as a permanent addition, but I imagine it would have to consistently outsell every other item by a huge margin to be deemed profitable enough as a menu mainstay.
